One of my faves is curried chicken salad in mini pitas or in some sort of little shells. When I make it, I just cut some chicken into tiny pieces, fry it with a little minced onion and maybe some celery or peas, then let it cool and add some mayo or yogurt mixed with curry powder or paste. Then spoon it into the pitas or shells. I think this month’s issue of Canadian Living has a similar recipe.

Slice up a really good baguette, get a dish of cream cheese and some smoked salmon. Voila!

Bonus points for capers and thinly sliced red onion.

  3. I say hummus and baby carrots 🙂
I hope you aren’t going to have to make everything. Why didn’t they get each Council member to bring something. It seems like a lot to put on you.

  4. Awesome suggestions, folks! Thank you so much! I was going to make some stuff but now I think I will just try to buy (but, J, I am totally going to make those salmon/cherry tomato things for my next poker night. Yummy!). I have a $200 budget to feed about 40 people so some simple dips and those M+M sandwiches (thanks, FameThrowa!) should be good, right?

Also I am getting a nice selection of homemade cookies and squares from Sugarplum Fairy Homebaking…which will make a nice addition to the party if I can keep from eating them all myself!

  5. hey listen. never been to a PTA so i will assume that there are adults at this party. if so, i make an awsomely delishous(can’t even spell it!) hors d’oeuvres. what you do is get a can of hearts of palm, wrap each of them in prochou meat (help me people – i cannot spell tonight and i’m doing this in a rush), that really expensive italian deli meat. before you wrap them up, cover one side of each slice with cream cheese. then slice them into bite size pieces. they are really good!
